I saw a recipe for ‘Mexican Lime Water’ somewhere on the web recently, and after being out on a hot day with my friend Raewyn I decided to give it a go. I didn’t have any limes so used one of our home grown meyer lemons, and the result was fantastic. It was better than any sports drink you can buy. Here’s what I did:
In a blender place,
- juice of 1 lemon
- 2 pinches of nice salt
- 3 tablespoons sugar
- a few fresh mint leaves
- 1 litre of chilled water
Blend the lot until the mint is teeny weeny specks. Pour back into the bottle the water came from. Serve over ice, or you could replace some of the water with ice to make a slushy version.
Very refreshing for a hot sub-tropical December day.
