This was another great but very simple dish that graced our table for Christmas this year. There’s no dressing with this salad, the juices from the vegetables combined with a hint of mint are superb on their own, and the colours are destined to belong at a sub-tropical Christmas table.
What to do: Mix together halved cherry tomatoes (they grow like weeds in our backyard), 2 Lebanese cucumbers, 1/2 a red onion chopped, and a small handful of chopped fresh mint leaves. Mix it all well until the juices marinate together. Serve with vegie roasts, a range of other salads or vegetable side dishes and a fresh home made dinner roll. Perfect.
